"Millie Wilson has served many receptions for the concert series that I coordinate as well as private parties in my home, so when faced with some medical warnings, it was natural to ask her for some advice about home cooking. With my crazy schedule, often working late at night and no chance for dinner until after 10p.m., I needed healthy food that was easy and fast to serve. We initially discussed my health needs, and tailored the menus to eliminate sugar and fat, and thanks to her, I had lost 3 pounds by the next doctor's visit. Millie has been a God-send with her prepared meals! I just pop a delicious salmon steak with Brussels sprouts or some other wonderful dinner into the microwave and voila; it's done in 3 minutes. "The Perfect Dinner

Not in our wildest dreams could we have envisioned anything so delightful as the fabulous four-course dinner, including wines, prepared and served by Millie & Paul Wilson in our home when we entertained guests from Spain recently.

It all came about when we successfully bid at the Scarborough Faire last March on this magnanimous gesture by the Wilson’s on behalf of the church chorale’s journey to Scotland.

If we had had any doubts, they were quickly dispelled when the Wilson’s arrived with food, wines, cooking utensils, serving dishes and cart. But the proof of the pudding is in the eating, and did we eat!

Feast your eyes on this menu.

Hors d’oeuvres: Olive Nut Spread, Creamed Florentine Appetizer, and Pate Maison, served with assorted crackers and a light and fruity white Grenache.

Salad: Crisp mixed greens with a mild vinaigrette dressing.

Dinner: Roast Marinated Leg of Lamb, Poached Asparagus with Hollandaise, White & Wild Rice,Seasoned Baked Tomatoes, Fresh Bakery Potato Rolls and Butter, with a rich, red St. Emilion.

Dessert: Poached Pears with CrèmeAnglaise sauce and Café Brulot Diabolique prepared by Paul with a showman’s flair.

Cleanup: Millie & Paul

We joined in the spirit of the auction in order to help the chorale and wound up helping ourselves. Not a bad deal, wouldn’t you say?

So, we take this opportunity to thank the Church Chorale and especially Millie and Paul Wilson, for a wonderful evening.
